Tomato Garlic Kuzhambu

Ingredients

  • Tomato – 3 Nos
  • Tamarind – Gooseberry size
  • Garlic flakes – 20 to 25 Nos
  • Sambar Onion – 10 to 15 Nos
  • Sambar Powder – 1 teaspoon
  • Turmeric Powder – a pinch
  • Gingelly Oil – 2 tablespoon
  • Mustard – 1/2 teaspoon
  • Jeera – 1 teaspoon
  • Fenugreek seeds – 1 teaspoon
  • Asafotida powder – a pinch
  • Curry leaves – few
  • Salt – 2 teaspoon or as per taste

Directions

  1. Soak tamarind in water and squeeze out the juice.
  2. Bring four cups of water to boil and add whole tomatoes. Allow to boil for two minutes and switch off the stove. When it is cold, take out the tomatos from water and peel off the skin gently. Mash the tomatoes well (or put it in a mixie and run for one second).
  3. In a kadai, pour the gingelly oil and when it is hot add mustard. When it pops up add jeera, fenugreek and asafotida. Fry till the fenugreek turns light brown. Add garlic flakes and fry for one minute. Then add sambar onion chopped along with curry leaves and fry nicely. Now add tamarind water, tomato puree, sambar powder, turmeric powder and salt and stir well. Allow to boil. Reduce the heat and cook on low flame till the kuzhambu is thick.

  4. Loved this recipe! esp because it does’nt have anything to grind (i hate having to grind stuff as then u have extra dishes to wash plus i dont have an indian mixie so it never comes smooth!).. my husband also loves this recipe and has requested this on many occasions!

  7. For one person what is the quantity should i want to use? Can we use this for white rice like kuzhambu?

    • Yes. You can serve this kuzhambu with rice. You can reduce the quantity of all the ingredients to half measure to make lesser amount of kuzhambu. However you cannot make exactly for one person since to boil the kuzhambu atleast a glass of water is required. You can keep this kuzhambu for few days in the fridge and use it.
