- Maida (All purpose flour) – 2cups
- Sugar – 3 cups
- Ghee – 1 cup
- Orange colour – few drops
- Cashew Nuts – 10 Nos
- Cardamom Powder – 1 teaspoon
Method:
Add enough water to Maida and make a thin batter without any lumps. Add the colour and stir well. Keep aside.
Add half cup water to the sugar and bring it to boil. Allow to cook till it reaches one thread consistency. Now slowly pour the maida batter and stir continuously keeping it on low flame. When it starts thickening, add ghee little by little while stirring the halwa. Stir continuously till it leaves the sides of the vessel. Add cardamom powder and fried cashew nuts. Mix well.
Tranfer it to a greased plate and cut it into squares.
Note: If you want more chewy halwa, then increase the sugar quantity to 4 cups.

i tried this recipe today, the taste was good but even after i kept in fridge it was just like a paste.

To get chewy type halwa, you have to cook the halwa till it leaves the sides of the vessel and form like a big ball and if you take a small quantity and roll with your fingers, it should also roll like a ball. If you remove it before reaching the right consistency, it may be like paste only. Also it depends upon the sugar quantity and its consistency and also quantity of ghee. Try in small quantity next time. You will get surely a good textured halwa.

For this halwa, if you touch the syrup, it should be sticky and form one thread. If you are not sure about the consistency, do not worry. For halwas, you can add the flour in beginning also. Just allow the sugar to boil and add the maida batter and stir continuously. At one stage it will blend well and leaves the sides of the vessel. At that stage you can remove it.

Very nice and informative website. I tried your maida halwa, but i could not get the halwa consistency, it became maida burfi. where could i have gone wrong. I really like this halwa, but was disappointed, but burfi is tasting good but it was not halwa.

May be water quantity in the batter less. The maida batter should be thin. If you add the batter in the sugar syrup, it will be watery and if you continue to stir, then it will become a thick pulp. You have to add required ghee too. Try with little quantity and let me know the feed back.

Can u tell approx. how many cups water you add to the maida ti dilute it?

For 1 cup flour approximately 2 cups of water is sufficient. However, depends on the quality of the flour, you may reduce or increase the water quantity by half cup.
