- Red apple (big size) - 3 Nos
- Sugar - One and half cups
- Ghee - 3 to 4 tablespoons
- Cardamom Powder - 1/2 teaspoon
- Cashewnuts - few
- Kesar Powder OR Orange red colour - little
Method:
Wash the apples and wipe it. Peel the skin and remove the seeds. Cut it into medium size pieces. Put it in a mixie and grind it to a fine pulp.
In a thick bottomed kadai (preferably non-stick kadai) put one teaspoon ghee and fry the cashew nuts. Remove and keep it aside. Same kadai put the remaining ghee and add the apple pulp. Fry it on medium flame till the water content in the pulp is evaporated and it becomes slightly thick. (It will take 10 to 15 minutes). Add sugar and mix well. Add food colour and stir it continuously till it leaves the sides of the kadai. Add cardamom powder and fried cashew nuts. Mix everything well and transfer it to a greased bowl.

You can serve it with a spoon or cut it into squares. You will get approximately 15 pieces.
Note: Instead of grinding the apples, you can grate it and follow the above method. The halwa will look like this:

Nice to hear that you tried this halwa and came out well. If you want to make pieces, you have to stir the halwa till it leaves the sides of the vessel and when you stir it will be like a big ball and the consistency will be like a thick dough. Normally when you spread it on a greased plate and allow to cool for sometime, you can easily cut the pieces. To get a perfect pieces, gently cut the halwa with sharp knife and using the Dosa Spatula, lift the pieces from the plate.

I tried this. It didn't come out well. First time after I transfered the cooked halwa to the greased plate, it remained loose for a very long time. But, tasted really good. I tried to recook the same for better consistency. But, this time it became rock solid. What mistakes had happened both the times? Approximately how long does it take to cook after adding the sugar? After adding sugar, it will take 10 to 15 minutes more to become solid. Yes. you have to have cook in medium flame only. Otherwise it will get burnt.

You have to choose good quality apple. Before adding sugar, you have to cook the apple pulp thoroughly and there will not be any water content in that. When you are grinding apple also, you have to grind it without adding any water. You have to cook the halwa in medium flame only.

I think you have not fried the apple paste fully. You have to stir fry on medium flame till all water content is fully absorbed and then you have to add sugar and cook till it leaves the sides of the vessel without sticking.

For medium size apple, you will get 3 cups of pulp. Don’t worry about size of the apple. Measure the pulp and add half the quantity of the pulp.

To cut the halwa, you have to cook the halwa till it forms a big ball without sticking to the sides of the vessel. Moreover, you have to wait for the halwa to cool down completely to cut nice squares.

Bubbling is a stage where it is still having some water content. You have to stir the halwa till it forms like a ball. Check the Papaya halwa recipe where I have given some pictures. Just see the last stage of the halwa. It should be thick like that. If you transfer the halwa at this stage and cool it, you will be able to make slices. However, halwa slices will not be like burfi and slightly it is tend to break.

May be you have added different red/kesar colour. If you use the apple as soon as you grate it (without discoluring the apple) and add a pinch of kesar or orange colour, you will get perfect halwa colour.

Any sweet and soft texture apple will do. Sour type green apple or some apples have the tangy and crunchy taste will not be suitable for this halwa. I made this halwa with the red colour apples available at the US when I was there.

I tried apple halwa and it came really well. I did use UK red apples however it was slightly sour and I guess I should have put more sugar but apart from that for first time halwa maker like me it’s a huge success.
Also tried tomato kulambu, poha rice, potato kuruma. Everything turned out very well and for bachelors like me doing it correctly (well as long as it tastes good its correct for us) is a great feeling.
