Akki Roti – karnataka recipe

“Akki Roti” is a specialty of Karnataka. I tasted this Roti long back with special onion chutney at Udipi Hotel. I tried myself once by patting the rice dough by hand and fried in hot tawa. It was good but little hard. After some research I found out Juicybites recipe seems to be simple and perfect.
I followed the recipe (except the quantity of water – I used one cup water for one cup rice flour) and made surprisingly soft Roti. I have not made the subzi mentioned in Juicybites but served with onion chutney.

Akki Roti is a kannadiga dish made with rice flour that is served for breakfast.

Ingredients

  • Rice flour – 1 cup

  • Water – 1 cup

  • Salt – 1/2 teaspoon

Directions

  • Boil water with salt. When it starts boiling, reduce the heat and add the rice flour. Stir the flour and water well till it becomes a thick dough.
  • Turn off the stove and close the dough with a lid. After ten to fifteen minutes, remove the lid and allow the dough to cool.
  • When it is warm enough to handle, knead well and make a soft dough. Take out orange size dough and roll it like chapati and put it on a hot pan. Leave it on the pan for few seconds and then turn it to the other side. With a spatula press the roti gently as the roti puffs up. Remove from the pan.
  • Repeat step 3 with the remaining dough.

    Your blog is very very helpfull for me, but i came over ur blog very recently first thing i tried is akki roti… the result was good but i couldn't make roti as u displayed here…. it looks very thin.. when i tried to make thin as ur display it was breaking…..but some how we enjoyed the dish…

    • Thank you Sunita for trying this roti and giving your feed back. You can also add chopped carrot, onion, coconut gratings, coriander leaves to the dough and make colourful akki roti too.

    Every single dish that I have made from your web side has been exceptionally good…. except the Akki roti. The water to rice flour ratio was too much. It became extremely soft, and was very hard to handle. I had to add more rice flour to make it right on the tawa.
    I had gone to the other site also,( juicybites) and was surprised that she was asking us to add two cups of boiling water.
    I made the recipe EXACTLY like what you have described with 1:1 ratio of boiling water to rice flour. I think if I add 1/2 cup of water and add more as needed, then the dough would be more manageable.
    I did make the sabzi and it was very good.

    • Thank you Zakiah for writing. Some rice flour absorb more water and some less depending upon the quality of rice from which rice flour is prepared. It is always better to boil little more water and reserve some boiling water handy and add if you find the dough is hard. Nice to note that you prepared it sabzi and turned out good.

  15. Should we add oil/ghee while preparing dough or preparing roti?

  16. Am not able to roll it out like roti…the dough breaks and sticks to the roll plate..can u tell me where I would have gone wrong

    • May be the rice flour is not cooked properly. You have to boil the water well before adding the rice flour. When you stir continuously the rice flour get cooked well and become soft and pliable. Sometimes, the quality of rice flour also make the difference.
