Ragi Idli and Dosai

Ragi idli batter can be made in multiple ways. We can also use the ragi batter to make ragi dosai. This dish goes well with Coriander leaves Chutney.

Ragi idli batter can be made in multiple ways. We can also use the ragi batter to make ragi dosai.d

Ingredients

  • Method 1:
  • whole ragi grain – 1 cup

  • Idli Rice – 1 cup

  • Urad dhal – ½ cup

  • Fenugreek seeds – 2 teaspoons

  • Method 2:
  • Ragi Flour – 2 cups

  • Idli Rice – 1 cup

  • Urad dhal – ½ cup

  • Fenugreek seeds – 2 teaspoons

  • Salt – 1 teaspoon or as per taste

Directions

  • Method 1 (Using whole ragi grain)
  • Soak all ingredients.
  • Grind ragi and rice to a fine paste.
  • Then grind urad dhal and fenugreek into smooth paste. Mix both these and add enough salt and make a batter.
  • Keep it for at least 8 hours for fermentation. Then make idli as usual.
  • Method 2 (Using Ragi flour)
  • Soak ingredients from above except Ragi.
  • Grind the rice, urad dhal and fenugreek to a fine paste.
  • Add 2 cups ragi flour to this along with salt and make a batter.
  • Ferment it and make idli.
  • Method 3 (Using regular Idli Batter)
  • Add a cup of ragj flour to the normal idli batter (about 2 cups of batter).
  • Add a pinch of salt and ½ teaspoon “Fruit Salt” and mix it well and make idli.
  • Tips
  • followed the method two and seasoned the batter with little mustard, urad and bengal gram dhal, red chilli and few curry leaves.
  • Making Dosa
  • With the same batter, we can make dosa also. Just add little water to the batter and make it slightly thinner than the idli batter.
  • Heat Tawa and grease it. Pour a ladle of dosa batter and spread it to a thin circle.
  • Pour a teaspoon of oil around the corners and cook for few seconds.
  • Flip it over and cook other side also.
  • Serve with Coriander Chutney.

    I tried this Ragi Dosa using your 3rd method and with some changes, i have seasoned with bengal gram dal, mustards, green chilly, curry leaves,
    and added half tomato jucie, i am not a fan of Ragi, but taste was good the first day and very very good the 2nd day when i use the rest of the batter.

      Nice to hear that this recipe made the sugar level normal. Now we get ragi semiya and other ragi products in the market. You can try more recipes with ragi. Even you can make snack items like Murukku, thattai etc., with ragi flour. I will also try to post the recipes shortly.

    I have few queries..
    How long should we need to soak rice, urad dhal and fenugreek seeds? Do we soak all together or soak each separately?
    Also while grinding do we grind urad dhal & Rice together or separately?

    • Hi Divya,

      Thank you for your kind words. Rice and dhal should be soaked atleast for 6 hours. Both should be soaked separately. Fenugreek is added to urad dhal and soak it. Grinding also to be done separately. If you want to grind very small quantity (say about a cup), then you can soak altogether and grind it to a fine paste.

    • Hi Radha,

      Yes. You can soak only urad dhal and grind it to a paste. Add ragi flour with salt and mix it well. Ferment and make idli.

    • Hi Vidya,

      You can combine rice and dhals according to your own taste. Normally for 1 cup rice you can add 1/2 or 3/4 cup thuvar dhal or mixed dhal (thuvar dhal + bengal gram dhal+ green gram dhal etc). Some people use 1:1 ratio of rice and dhal. Check my version of Spicy Adai under Breakfast category.

  18. hi,i was checking for a diabetic recepi.i have a packet of ragi seeds.how can i make ragi dosa without rice.pls tell me its propotion.i want to avoid rice completly.

    • Hi Manju,

      You make make dosa only with ragi flour. Just mix it with water and make thin batter like dosa batter. Add salt, chopped onion, green chilli, ginger and make dosa. No proportion is needed here. If you are using ragi seeds. Soak it, wash and drain the soaked water and then grind it to a soft paste and use it.
