Quick Mixed Vegetable Kootu

This is a simple and fast recipe for kootu, a dish made with a variety of mixed vegetables. It can be enjoyed with rice or roti.

Ingredients

  • Mixed vegetables cut into small size pieces – 2 cups

  • Soaked Cow Gram (Karamani) – 2 tablespoons (optional)

  • Green Gram Dal – 1/2 cup

  • Turmeric Powder – a pinch

  • Sambar Powder – 2 teaspoons

  • Oil – 1 teaspoon

  • Mustard – 1/2 teaspoon

  • Urad dhal – 1 teaspoon

  • Cumin (jeeragam) – 1/2 teaspoon

  • Asafoetida Powder – two pinches

  • Salt – 1 teaspoon or as per taste

Directions

  • To prepare the kootu, start by soaking Green Gram dal for approximately half an hour. Then, in a pressure cooker, combine the soaked Green Gram dal, cut vegetables, and Karamani (if using). Add salt and enough water to cover the vegetables. Pressure cook for two to three whistles.
  • Once cooked, carefully remove the lid from the pressure cooker and gently mash the vegetables to your desired consistency.
  • In a separate Tadka pan, heat oil and add mustard seeds. When the mustard seeds start to pop, add urad dal, cumin seeds, and a pinch of asafoetida powder. Fry the seasoning for a brief moment.
  • While frying the seasoning, incorporate sambar powder and turmeric powder, giving it a quick toss for added flavor.
  • Combine this seasoning with the cooked vegetables, ensuring all the ingredients are thoroughly mixed.

Notes

  • Adding sambar powder in the seasoning will give nice flavour to the kootu. (But ensure not to burn the powder). You can use any type of available vegetables. I used broad beans, Cluster Beans, Chow Chow, carrot, potato and one small tomato in this Kootu.
  • Instead of adding sambar powder in the seasoning, you can also add sambar powder and turmeric powder along with the vegetables and pressure cook it. Then just make a seasoning with mustard, urad dal, cumin and asafoetida and add it to the kootu.

    • Hi Arthy,

      You can use any vegetable for Kootu. Chow-chow, Ridge Gourd, Bottle Gourd, Snake Gourd, Pumpkin – both yellow and white, brinjal etc are commonly used for Kootu. You can check all Kootu recipes in my “Kootu” catagory.
