Learn how to make the traditional South Indian dish Kosumalli, a refreshing salad made with raw vegetables like carrot and cucumber, perfect for weddings.

Ingredients

  • Carrot (Medium size) – 2

  • Green Gram Dhal – 1/2 small cup

  • Green Raw Mango gratings- 1 or 2 tablespoons

  • Green chillies – 2

  • Coriander leaves – few

  • Coconut gratings – 2 tablespoon

  • Lemon juice – 1 teaspoon

  • Oil – 1/2 teaspoon

  • Mustard – 1/2 teaspoon

  • Asafoetida – a pinch

  • Curry leaves – few

  • Salt – 1/2 teaspoon or as per taste

Directions

  • Begin by soaking the green gram dal in water for approximately one hour.
  • Peel the carrot and grate it finely. Chop the coriander leaves. To reduce the spiciness of the green chillies, slit them lengthwise and remove the seeds. This method allows you to enjoy the chillies without overwhelming heat.
  • In a mixing bowl, combine the grated carrot, deseeded green chillies, chopped coriander leaves, and mango gratings. Season with salt and mix well to combine the flavors.
  • Heat a small tadka pan with oil over medium heat. Once the oil is hot, add mustard seeds and wait for them to crackle. Then, add a pinch of asafoetida powder and curry leaves, frying them briefly to release their aromas. Pour this hot seasoning over the carrot mixture to infuse it with flavor.
  • Next, drain the soaked green gram dal thoroughly and add it to the bowl with the carrot mixture. Incorporate coconut gratings and a squeeze of lemon juice for a tangy finish. Gently mix all the ingredients together, ensuring they are well combined.
  • Your salad is now ready to be served. This refreshing and nutritious dish is perfect for a healthy snack or a light meal.

Notes

  • Instead of grating the carrot, you can also cut it into thin strips or tiny pieces. This way the carrot will be more crisp when you eat.

Yes it is a salad only and very healthy. We can have this as a starter or side dish to hot gravies. Or just munch it as it is.
