Mullu Murukku

Mullu Murukku is a popular South Indian savory snack made from rice flour and flavored with spices. It is commonly enjoyed during festive occasions like Diwali and is often served with tea or coffee.

Ingredients

  • Rice flour – 3 cups

  • Besan flour – 1 cup

  • Pottu Kadalai Powder – 3 tablespoons

  • Red Chilli powder – 2 teaspoons

  • Asafotida powder – 1 teaspoon

  • Salt – 2 teaspoons or as per taste

  • Butter or Ghee – 4 teaspoons

  • Oil for deep frying

Directions

  • Sift the rice flour and besan flour into a large mixing bowl.
  • Add Pottu Kadalai powder, red chili powder, asafetida, and salt to the sifted flours. Stir the mixture until well combined.
  • Incorporate butter or ghee into the flour mixture. Use your hands to mix thoroughly, ensuring even distribution of the fat.
  • Gradually add water to the mixture, kneading it until a soft, pliable dough forms.
  • Heat oil in a kadai (or wok) over medium heat.
  • Fill a Murukku Press fitted with a “single star” plate with a portion of the dough. Squeeze the dough onto a small plate or the back of a flat ladle, creating a circular shape.
  • Carefully lower the formed dough into the hot oil. Fry until it reaches a golden-yellow hue, making sure it turns crispy but doesn’t brown.

Notes

  • If you are making in large quantity, then divide the flour into 3 to 4 parts. Then add water little by little in one part of the flour and make a soft dough.
  • Once the prepared dough is finished, then take another part of the flour and make dough and proceed as above. This will avoid drying of the dough and also gives uniform colour to all the Murukku.
  • You can also press the Murukku directly in the hot oil.

    The reason may be the murukkus are not fried properly. If you use the quantities mentioned in the above recipe, you will definitely get crispy murukkus. Or you would have added more butter or more besan. Also you have to fry the murukku in uniform medium flame till it is crisp and golden brown. If you keep the flame in high, then the outer portion get fried soon and inner part will not get cooked and then the murukku will not be crisp.

    If i have to prepare the rice flour from scratch at home, for making the murukku, how should i do it?…. do i have to soak the rice and then take it to the mill?…. pls explain….i’m planning to make this for krishna jayanthi…

    Nice to see your web. The rice flour mentioned in all your murukku receipe is normal rice flour we get from the shop or is it washed, dried and milled rice flour.

    Your recipe is so awesome, followed ur measurements exactly and it came out wonderful.. It was a big hit in my home and when i gave it to my friends,even there i got appreciated.. You are doing a great job… And what i like the most is even you give measurements for salt also..Or else for a beginner in cooking like me finds the salt measurement difficult.I use to taste it and then add little ,then again taste it..atlast at one stage without knowing i would ‘ve added a large quantity 😀 Thanks again ..And we wish you all the best ..
