Beetroot Banana Kesari

Beetroot Banana Kesari

Ingredients

  • Banana (Fully Ripe) – 1
  • Beetroot cut into pieces – 1/2 cup
  • Rawa – 1/2 cup
  • Sugar – 1/2 cup
  • Ghee- 2 to 3 tablespoons
  • Milk – 1/2 cup
  • Cashew Nuts – few
  • Cardamom Powder – a pinch

Directions

  1. In a mixie put the beetroot pieces, add 1/2 cup water and grind it to a fine puree. Strain the puree , separate the beetroot juice and store in separately.
  2. In a frying pan (kadai) add ghee and rawa. Then fry till nice aroma comes out. Cut the banana into small pieces (or mash it and add) and mix well. Add milk and stir well. Once the milk is absorbed, then add beetroot juice and mix it thoroughly. Then add sugar and stir continuously till it become thick and leaves the sides of the vessel. If necessary add few drops of ghee so that the kesari will come out of the vessel without sticking. Finally add cardamom powder and chopped cashew nuts. Mix well and remove.

  1. We should add only the beetroot juice?

    • Ji Jayanthi,

In this recipe, I have added beetroot juice to give natural colour to the kesari. You can also use carrot juice and make Carrot Banana Kesari. Or even for normal kesari, we can use fresh veg juices to get natural colour.
