Fruit Kesari

For this Kesari, you can use any desired/available fruits of your choice. I used Banana, Apple, Papaya, Chikko (Sapota) and Orange.

A sweet recipe made with mixed fruit pieces and rawa.

Ingredients

  • 1 cup fruits

  • 1 cup rawa

  • 1 tablespoon cashew nuts

  • 1 tablespoon raisins

  • 1 cup sugar

  • 1 teaspoon cardamom powder

  • food color

Directions

  • Peel the skin and remove seeds from the fruits. Cut it into small cubes. For one cup rawa, one to one and half cups of fruit pieces can be used.
  • In a thick pan, add a teaspoon of ghee and fry cashew nuts and raisins separately and keep it aside.
  • In the same pan add one more teaspoon of ghee and fry the fruit pieces on low flame for two to three minutes and remove it.
  • In the same pan, add one tablespoon ghee and fry the rawa for one or two minutes.
  • In a thick pan pour three cups of water and bring to boil.
  • When it is boiling add the rawa and stir continuously till the rawa cooked soft.
  • Now add sugar and stir continuously. Make sure there is no lump.
  • Add few drops of kesari colour and mix well.
  • Add fried fruit pieces along with little ghee and stir well.
  • Cook on low flame till it is thick and leaves the sides of the vessel.
  • Now add cardamom powder, fried cashew nuts and raisins. Mix well and remove from stove.

Notes

  • If you want more sweet, then you can increase the quantity of sugar to one and half cups.

    Banana, Apple and Papaya may hold their shape when chopped into small cubes. But how can I cut Sapota (it will become mushy) or Orange (it will be watery) into cubes ? Also, both will turn into paste when cooked. How to avoid this?

    • Hi Sudha Kannan,

      If you choose fully riped but firm sapota, you can cut it easily without making it mushy. Orange segments also, just feel the white skin and make it into two pieces. When you fry these in ghee, it will become little firm. Moreover when you add at the end of the cooking, it will blend with the kesari and even the orange mashed with the kesari, it will give nice orange flavour.

    Hi Madam, can v use coconut milk instead of water plz suggest.

    • Coconut milk will make the kesari more heavy and when you cook the coconut milk for long time (till the rawa cooked), the milk will turn into oil. Taste will also differ.
