Green gram dal urundai is a traditional South Indian snack made from split green gram dal

Ingredients

  • Green Gram Dhal – 2 cups

  • Sugar – 2 cups

  • Ghee – ½ cup

  • Cardamon – 8

  • Cashew Nuts – 10

Directions

  • In a dry kadai, roast the green gram dhal until it turns a light brown color.
  • Use a mixer to grind the roasted green gram dhal into a fine powder.
  • Grind the sugar in the same manner.
  • Sieve both the green gram dhal powder and the sugar powder separately.
  • Measure out equal amounts of each and combine them in a mixing bowl.
  • Grind cardamom into a powder and mix it into the dhal-sugar mixture.
  • In a kadai, heat a teaspoon of ghee and fry the cashew nuts.
  • Once done, add them to the dhal mixture, stirring thoroughly to combine.
  • In the same kadai, add the remaining ghee and heat it over low flame.
  • Take two or three large spoonfuls of the prepared dhal mixture and place it in a plate.
  • Add one or two tablespoons of the warmed ghee and mix well.
  • Once the mixture is warm to the touch, shape it into small, lemon-sized balls. Continue until you’ve used all the mixture.
  • With the given measurements, you should yield approximately 20 green gram dhal urundais.
