The dish is typically flavored with saffron, cardamom, and roasted nuts, and has a pudding-like texture.

Ingredients

  • 1 cup rava (Semolina)

  • 1 1/2 cup sugar

  • 4 to 5 tablespoon ghee

  • Few cashew nuts

  • Few raisins

  • 1 teaspoon cardamom powder

  • Few drops of kesari colour

Directions

  • In a pan, add two tablespoon ghee and fry the cashew nuts and raisins. Remove it and keep aside.
  • In the same kadai, add one more tablespoon ghee and fry the rava for one or two minutes. Keep it aside.
  • In a thick pan pour three cups of water and bring to boil. When it starts boiling add the rawa and stir continuously till the rava is thick and cooked soft.
  • Now add sugar and stir continuously. Make sure there is no lump. Add few drops of kesari colour and mix well.
  • Add remaining ghee now. and stir well. Kesari will leave the sides of the vessel.
  • Now add cardamom powder, fried cashew nuts and raisins and mix well and remove from stove.

Notes

  • You can also use saffron instead of food coloring.

      Nice to hear that you prepared rawa kesari and came out well. Yes. for 1 cup rawa if you add 2 cups sugar and more water, the kesari tastes good and soft. However, for health reasons, I used to reduce the sugar quantity. Try “Fruit Kesari”. It is also a very tasty one.
