A potato side dish made with mint (Pudina) and potato. This dish can be served with hot rice.

Ingredients

  • Potato – 2 Nos

  • Pudina (Mint leaves) – a handful

  • Onion – 1 Big

  • Tomato – 1

  • Fresh Ginger – a small piece

  • Garlic – 2 flakes

  • Curry leaves – few

  • Sambar powder – 2 teaspoons

  • Turmeric powder – 1/4 teaspoon

  • Salt – 1 teaspoon

  • Oil – 4 tablespoon

  • Mustard – ½ teaspoon

Directions

  • Pressure-cooking the potatoes until they are soft will make them easier to remove the skin and cut them into smaller pieces.
  • You can also crush ginger and garlic and chop the onion and tomato finely.
  • Then, in a frying pan, heat some oil and add mustard. When it pops, add the chopped onion and curry leaves and fry until the onion is transparent.
  • Add ginger garlic paste and fry for a while.
  • Then add the tomatoes, turmeric powder, sambar powder, and salt.
  • Fry until the tomatoes are mashed.
  • Add pudina (mint leaves) and fry for a while.
  • Finally, add the potato pieces and mix well.
  • Keep the stove low and stir the potatoes occasionally until the potato curry is dry.
