This mixed vegetable pachadi is served with any pulao and even with chapati.

Ingredients

  • Cucumber – 1

  • Big Onion – 1

  • Tomato – 1

  • Carrot – 1

  • Coriander leaves – few

  • Green Chillies – 2 (Medium size)

  • Salt – 1/2 teaspoon or as per taste

  • Curd – one big bowl

Directions

  • Remove the skin and seeds from cucumber and and cut it into tiny pieces.
  • Remove skin from carrot and cut it also to the same size of cucumber pieces.
  • Cut tomato and remove the seeds and inner portion. Cut it into small pieces
  • Slit the green clillies and remove the seeds and chop finely.
  • Chop Coriander leaves and onion finely.
  • Whip the curd and add salt and put it in a bowl. Add all the cut vegetables in the curd and mix well.
