Keerai Cucumber Puzhi Kootu

This Kootu is prepared with Amaranthus Leaves (Mulai Keerai), Cucumber, Green Gram Dal and tamarind.

Ingredients

  • Keerai – bowl of chopped leaves

  • Cucumber – 1

  • Green Gram Dal – ¼ cup

  • Tamarind – small gooseberry size

  • Sambar Powder – 1 teaspoon

  • Turmeric powder – 2 pinches

  • Salt – ½ teaspoon or as per taste

  • For Seasoning:
  • Oil – 1 teaspoon

  • Mustard – ½ teaspoon

  • Urad dal – 1 teaspoon

  • Asafoetida Powder – 2 pinches

  • Chopped onion – 1 tablespoon

Directions

  • Wash and chop the greens roughly. Cut the cucumber into bite size pieces.
  • Soak tamarind in little water and extract a tablespoon of thick juice and keep aside.
  • Put the green gram dal along with the turmeric powder in a vessel and add enough water and cook till its 3/4th cooked.
  • Add chopped greens, cucumber pieces, sambar powder, salt and half cup water. Mix well and allow to cook for few minutes.
  • Then add the tamarind juice and stir well.
  • In a tadka ladle put a teaspoon of oil and when it is hot add mustard, urad dal, asafoetida powder and chopped onion. Fry for few seconds and add this seasoning to the Kootu. Mix it once again and remove.
