Learn how to make a flavorful and versatile spice powder using white and black til seeds, bengal gram dhal, and spices. Perfect for various dishes!

Ingredients

  • White Til seeds – 1/2 cup

  • Black Til Seeds – 1/2 cup

  • Bengal Gram Dhal – 1/4 cup

  • Asafoetida – a small piece

  • Red Chillies – 10 to 12 Nos

  • Salt – 2 teaspoons or as per taste

Directions

  • Warm a kadai over medium heat and dry-roast the sesame seeds (also known as ’til seeds’ or ‘Ellu’ in Tamil), making sure not to add any oil. Once toasted to a golden hue, remove the seeds and set them aside.
  • Next, in the same kadai, add a teaspoon of oil. Roast the Bengal gram dal, red chillies, and asafetida until fragrant and the dal turns a light golden brown. Allow these ingredients to cool to room temperature.
  • Once cooled, combine the roasted sesame seeds with the Bengal gram dal mixture. Add salt to taste and grind everything together into a fine powder using a mixer or grinder.
  • Transfer the freshly prepared powder to an airtight container to maintain its freshness and flavor.
  • This versatile ‘Podi’ is not just a seasoning but a flavor enhancer. It serves as the key ingredient in Ellu Sadam (Til Rice), offering a nutty and spicy undertone to the dish. It also pairs beautifully with idli and dosa, adding a burst of flavors that perfectly complements these traditional Tamil dishes.
