Kootu podi is a spice blend that is used in South Indian cuisine to flavor and enhance the taste of kootu, a traditional South Indian dish made with lentils and vegetables. This podi (powder) gives a nice flavor and texture to Kootu. You can sprinkle a little podi to your regular kootu before removing from the stove. Or just boil desired vegetables with a little sambar powder and salt. Add a little tamarind water and boil. Finally, sprinkle 2 to 3 teaspoons of this Kootu Podi and mix well. Kootu is ready.
