Ingredients

  • Carrot – 4

  • Onion – 1

  • Green Chillies – 4

  • Coconut gratings – 2 tablespoons

  • Curry leaves – few

  • Oil – 2 teaspoon

  • Mustard – ½ teaspoon

  • Urad dhal – 1 teaspoon

  • Jeera (Cumin) – ½ teaspoon

  • Asafoetida powder – a pinch

  • Salt – 1 teaspoon or as per taste

Directions

  • Begin by peeling the carrots and chopping them into small pieces. Finely chop the onion and green chillies as well.
  • Heat a kadai and pour in the oil. Once the oil is hot, add the mustard seeds. Wait for them to pop before adding the urad dal, jeera, and a pinch of asafetida powder. Fry these until the urad dal turns a light golden brown.
  • Next, add the chopped onions, green chillies, and a few curry leaves to the kadai. Sauté these ingredients until the onions become translucent.
  • Now, introduce the carrot pieces to the mixture. Stir well to combine everything. Season with salt, and then sprinkle a little water over the mixture. Cover the kadai with a lid and let it cook on a low flame. This process should be continued until the carrots are tender and cooked through.
  • Finally, stir in the coconut gratings, blending them well with the other ingredients. Once everything is thoroughly mixed, remove the kadai from the stove. Your dish is now ready to be served.
