Spice up your meals with this quick and flavorful cauliflower stir-fry recipe. Packed with bold flavors and easy to adapt, it’s a versatile side dish or snack option.

Ingredients

  • Cauliflower – 1 (medium size)

  • Chilli flakes – 2 teaspoons

  • Pepper Powder – 1 teaspoon

  • Garlic flakes – 5 to 6 (small size)

  • Tomato puree – 2 to 3 tablespoons

  • Oil – 1 tablespoon

  • Mint leaves or spring onion – few

  • Salt – 1 teaspoon or as per taste

Directions

  • Cut the cauliflower into florets. Boil the florets in water with a pinch of salt for a few seconds, then remove and set aside.
  • Finely chop the garlic, mint leaves, or spring onions.
  • Heat oil in a pan, add the garlic, and sauté briefly. Add 2 to 3 tablespoons of water and continue frying until the water evaporates.
  • Introduce the cauliflower with another 2 to 3 tablespoons of water and fry briefly.
  • Stir in chili flakes and salt. Next, add tomato purée and combine well.
  • Incorporate the chopped mint or spring onions and fry until the mixture is dry. Finish by adding pepper powder, toss everything well, and then remove from heat.

Notes

  • Tomato ketchup can be substituted for tomato purée. If purée is unavailable, boil a large ripe tomato for five minutes, peel, cool, and then blend into a fine purée. If chili flakes are unavailable, coarsely grind 3 to 4 red chilies in a mixer.
