This easy Indian-style cauliflower stir-fry recipe is made with simple ingredients like coriander seeds, red chillies, and coconut gratings.

Ingredients

  • Cauliflower – 1

  • Coriander seeds (Daniya) – 1 tablespoon

  • Red Chillies – 3 to 4

  • Curry leaves – few

  • Onion – 1

  • Turmeric Powder – 1/4 teaspoon

  • Pepper powder – 2 pinches

  • Oil – 2 teaspoon

  • Coconut Gratings – 2 tablespoons

  • Coriander Leaves – few

  • Salt – 1 teaspoon or as per taste

Directions

  • Begin by separating the cauliflower florets and chopping them. Then, briefly blanch them in boiling water before removing them.
  • Finely chop the onion.
  • In a small kadai, dry roast the coriander seeds (daniya), red chillies, and curry leaves until they become hot to the touch. Allow them to cool, and then grind them into a powder.
  • In a kadai, heat oil and add red chillies and the chopped onion. Sauté for a few seconds.
  • Add the cauliflower and stir-fry for a few minutes. Add salt and turmeric powder, and mix well. Cover with a lid and cook for 2 to 3 minutes. There’s no need to add water, but if desired, you can sprinkle a handful over the mixture.
  • Stir in the spice powder and cook for another 5 to 6 minutes.
  • Sprinkle pepper powder and mix well.
  • Finally, add coconut gratings and chopped coriander leaves.
  • Thoroughly mix all the ingredients together and then remove from heat.
