Learn how to make a delicious and flavorful cauliflower poriyal, a traditional South Indian dish packed with spices, ginger, and curry leaves. Perfect as a side for rice or roti.

Ingredients

  • Cauliflower (big size) – 1

  • Bengal Gram Dhal – 1 tablespoon

  • Red chillies – 2 to 3

  • Fresh Ginger – a small piece

  • Curry leaves – 1 string

  • Turmeric Powder – two pinches

  • Oil – 1 tablespoon

  • Mustard – 1/2 teaspoon

  • Urad dhal – 1 teaspoon

  • Salt – 1 teaspoon or as per taste

Directions

  • Start by cutting the cauliflower into florets. Peel the ginger and finely chop it into small pieces.
  • Place the cauliflower florets in a pot of boiling water. Add a pinch of salt and turmeric powder, and let them boil for a few seconds. Then, remove the florets from the water and set them aside.
  • In a small kadai, heat a teaspoon of oil. Fry the Bengal gram dal, red chillies, curry leaves, and chopped ginger until they are well-cooked. Once done, allow them to cool. Transfer these fried ingredients into a mixer and grind them into a fine powder.
  • In another kadai, heat another teaspoon of oil. Add mustard seeds and wait for them to pop. Then, add urad dal and fry until it turns light brown.
  • Add the boiled cauliflower florets to the kadai, along with a pinch of salt. Mix well, cover with a lid, and cook on medium heat for two to three minutes, stirring occasionally.
  • To finish, sprinkle the ground powder over the cauliflower. Reduce the flame to low and stir the mixture for a few seconds, or until everything is well-blended and appears dry. Your dish is now ready to be served.

Notes

  • This can be prepared in microwave oven also. For microwave method, no seasoning is required. You can prepare the dal powder and keep it. Put the cauliflower florets in a microwave bowl (preferably a flat glass bowl) and add turmeric, salt and oil. Mix it well and microwave it for 4 to 5 minutes. Ensure to take out every one minute and stir it and put back to microwave oven. Then sprinkle the dal/chilli powder, mix it and again microwave it for two minutes.
