Ingredients
Potato – 2 Nos
Pudina (Mint leaves) – a handful
Onion – 1 Big
Tomato – 1
Fresh Ginger – a small piece
Garlic – 2 flakes
Curry leaves – few
Sambar powder – 2 teaspoons
Turmeric powder – 1/4 teaspoon
Salt – 1 teaspoon
Oil – 4 tablespoon
Mustard – ½ teaspoon
Directions
- Pressure-cooking the potatoes until they are soft will make them easier to remove the skin and cut them into smaller pieces.
- You can also crush ginger and garlic and chop the onion and tomato finely.
- Then, in a frying pan, heat some oil and add mustard. When it pops, add the chopped onion and curry leaves and fry until the onion is transparent.
- Add ginger garlic paste and fry for a while.
- Then add the tomatoes, turmeric powder, sambar powder, and salt.
- Fry until the tomatoes are mashed.
- Add pudina (mint leaves) and fry for a while.
- Finally, add the potato pieces and mix well.
- Keep the stove low and stir the potatoes occasionally until the potato curry is dry.
