“Kosumalli,” also known as “Kosumbari,” is made by combining raw vegetables such as carrot, cucumber, plantain stem pieces, and soaked green gram dal. It can be made with a single vegetable or a combination of two or three. Carrot kosumalli is a common dish served at South Indian weddings.

Ingredients
Carrot (Medium size) – 2
Green Gram Dhal – 1/2 small cup
Green Raw Mango gratings- 1 or 2 tablespoons
Green chillies – 2
Coriander leaves – few
Coconut gratings – 2 tablespoon
Lemon juice – 1 teaspoon
Oil – 1/2 teaspoon
Mustard – 1/2 teaspoon
Asafoetida – a pinch
Curry leaves – few
Salt – 1/2 teaspoon or as per taste
Directions
- Begin by soaking the green gram dal in water for approximately one hour.
- Peel the carrot and grate it finely. Chop the coriander leaves. To reduce the spiciness of the green chillies, slit them lengthwise and remove the seeds. This method allows you to enjoy the chillies without overwhelming heat.
- In a mixing bowl, combine the grated carrot, deseeded green chillies, chopped coriander leaves, and mango gratings. Season with salt and mix well to combine the flavors.
- Heat a small tadka pan with oil over medium heat. Once the oil is hot, add mustard seeds and wait for them to crackle. Then, add a pinch of asafoetida powder and curry leaves, frying them briefly to release their aromas. Pour this hot seasoning over the carrot mixture to infuse it with flavor.
- Next, drain the soaked green gram dal thoroughly and add it to the bowl with the carrot mixture. Incorporate coconut gratings and a squeeze of lemon juice for a tangy finish. Gently mix all the ingredients together, ensuring they are well combined.
- Your salad is now ready to be served. This refreshing and nutritious dish is perfect for a healthy snack or a light meal.

- Instead of grating the carrot, you can also cut it into thin strips or tiny pieces. This way the carrot will be more crisp when you eat.
