This Mixed Fruit Pachadi is made with Apple, Mango, Pomegranate, Banana, Raisins, Cashew Nuts, Tomato and sugar. Dates, grapes and other available fruits can also be added to this.

Ingredients

  • Tomato (medium size) – 3

  • Mixed fruit pieces – 2 cups

  • Sugar – 3 tablespoons

  • Ghee – 1 teaspoon

  • Cashew Nuts – few

  • Raisins – few

  • Cardamom Powder – a pinch

Directions

  • Begin by bringing four to five cups of water to a boil in a pot. Once the water is boiling, add the tomatoes and cover the pot with a lid. Allow the tomatoes to cook for three minutes before turning off the stove.
  • Carefully remove the tomatoes from the hot water and set them aside to cool. Once they’ve cooled, peel off the skin and transfer the tomatoes to a blender. Blend until you achieve a smooth puree.
  • Pour the tomato puree into a pot and stir in the sugar. Continue stirring as you bring the mixture to a boil. Once it starts to thicken slightly, prepare the cashew nuts and raisins. Fry them in a teaspoon of ghee until golden, then add them to the pot along with a sprinkle of cardamom powder.
  • Finally, incorporate all the fruit pieces (I used Apple, Mango, Pomegranate, Banana) into the mixture, stirring well to combine. Remove the pot from the heat and allow the pachadi to cool for a while before serving. If you prefer, you can also refrigerate it and serve it chilled.

Notes

  • This can be prepared without tomato also. Just make sugar syrup and add all the fruit pieces.
  • Instead of adding cardamom powder, few drops of pineapple essence can be added.
