Ingredients

  • Besan flour – 2 and half cups

  • Rice flour – 1 cup

  • Crushed Pepper – 1 teaspoon

  • Red Chilli powder – 1 teaspoon

  • Asafoetida powder – ¼ teaspoon

  • Cooking Soda – 1/4 teaspoon

  • Ghee or butter – 2 to 3 teaspoons

  • Salt – 1 teaspoon or as per taste

  • Oil for deep frying

Directions

  • In a mixing bowl, combine besan flour, rice flour, pepper powder, red chili powder, asafetida, cooking soda, ghee, and salt. Gradually add water, mixing continuously, to form a thick dough.
  • Heat oil in a kadai over medium heat. Position a karaa sev plate above the hot oil and place a small portion of the dough onto it. Gently rub the dough so it falls through the holes in the plate and into the oil. Fry the dough until it turns a golden yellow color and becomes crisp.
  • Remove the fried sev using a slotted spoon, draining excess oil, and transfer to a paper towel-lined plate to cool. Once cooled, store in an airtight container to maintain freshness.
