You can make this vegetable pakoda using only besan and rice flour also. In that case, use 1 cup of besan flour to 1/2 cup of rice flour. I used the leftover jamun mix, which is why I included it.

Indulge in a delicious fusion of flavors with vegetable pakoda and gulab jamun mix. Crispy pakodas paired with sweet gulab jamun make a perfect snack!

Ingredients

  • Jamun Mix – 1 cup

  • Besan Flour – 2 tablespoons

  • Rice Flour – 2 teaspoons

  • Carrot (Medium size) – 1

  • Beans – 4 to 5 Nos

  • Cabbage – a small piece

  • Green Peas – a handful

  • Spinach or any greens – few

  • Onion – 1

  • Fresh Ginger – a small piece

  • Green Chilli – 1

  • Sombu (Fennel seeds) – 1 teaspoon

  • Red chilli Powder – 1/2 teaspoon

  • Asafoetida Powder – 2 pinches

  • Salt – 1 teaspoon or as per taste

  • Oil for deep frying

Directions

  • Finely chop the onion, green chili, and ginger.
  • Dice all the vegetables into small pieces.
  • Pound the green peas or briefly pulse them in a mixer for one or two runs.
  • In a large bowl, combine the jamun mix, besan, rice flour, red chili powder, asafoetida, fennel seeds (sombu), and salt. Mix thoroughly.
  • Then add the finely chopped onion, green chilies, ginger, and all the diced vegetables. Mix well again.
  • Heat two tablespoons of oil and pour it over the mixture. Stir with a spoon. Then, sprinkle a little water and knead into a stiff dough.
  • Heat oil in a kadai. Take a small portion of the dough, drop it into the hot oil, and deep-fry until golden brown.

Notes
