Ingredients

  • Spinach – a small bunch

  • Cucumber – 1 small

  • Water – 4 cups

  • Butter or ghee – 1 tablespoon

  • Fresh ginger – small piece

  • Garlic flakes – 2 (small size)

  • Salt and pepper powder as required

Directions

  • Remove the stems from the spinach leaves. Peel the cucumber and remove its seeds, then chop it into small pieces. Finely chop the ginger.
  • In a pan over medium heat, melt the butter. Add finely chopped garlic and sauté briefly until aromatic.
  • Add the spinach, chopped ginger, and cucumber pieces to the pan. Stir well to combine with the garlic and butter.
  • Pour in enough water to submerge the ingredients and bring the mixture to a boil. Reduce heat and simmer until the spinach becomes tender.
  • Remove the pan from heat and allow the mixture to cool. Once cooled, blend it into a fine purée using a blender or food processor.
  • Strain the purée to remove any remaining fibrous material. Return the strained liquid to the pan and reheat over medium heat.
  • Season with salt and pepper to taste. Stir well and serve hot.
