Kadalai Urundai

Ingredients

  • Groundnut – 2 cups
  • Jaggery – 1 cup
  • Cadamom Powder – 1/2 teaspoon
  • Rice flour – little for dusting the hand

Dry roast the groundnut and remove the skin and slightly crush it so that it will break into two pieces. (You can also use readily available roasted groundnuts).
In a heavy bottomed vessel pour 1/4 cup water and add jaggery powdered. Make a soft ball stage syrup. Remove from stove and add groundnuts and cardamom powder and mix well. Allow to cool for five to ten minutes. When it is still warm, dust your palm with little rice four (it will prevent sticking the syrup to your hand)and take out little groundnut mixture and make a small size ball.

    For karthigai, tried your appam, pori & kadala urundai.

    The appam was simply superb and same with urundais too. But, one problem have been facing a long time-the shiny color like in your picture or in the shops, not getting with my urundai. Could it be related to vellam or what? Pls clarify.

    Nice to hear that you liked the recipes. Thank you.

    You have to use “Paagu Vellam” which is round and like golden colour ball. Also the Paagu (Syrup) should be soft ball consistency, i.e. when you put few drops of the jaggery syrup in water, you should be able to take it out by your fingers and make a soft ball and if you throw this ball in a surface, it will make cling sound. This is the right consistency. You have to add nuts at this stage. Then the Urundai looks shiny.

    Similarly, moong dal thuvayal & carrot chutneys were also super hits.

  6. You can use sugar. However, the taste and colour will differ.
