Paal (Milk) Payasam


  • Milk – 5 cups
  • Raw Rice – ¼ cup
  • Sugar – 1 cup
  • Cardamom powder – 1 teaspoon

Soak the rice in water for half an hour. Put the milk in a heavy bottomed vessel and bring to boil. When it starts boiling, reduce the heat and add the soaked rice. Stir constantly till the rice cooks well and the milk quantity reduced to half of the original quantity. Add sugar and stir well. Allow to boil for few more minutes. Add cardamom powder and mix well.
Note: Instead of adding raw rice, you can also add ½ cup cooked rice mashed well to the milk.
Also you can add one tablespoon sooji to the boiling milk to make the payasam.
Fried cashew Nuts and raisins can also be added.
