Ingredients

  • Oats – 1 cup

  • Green Gram Dhal – 1/2 cup

  • Fresh ginger – a small piece

  • Asafoetida Powder – two pinches

  • Turmeric powder – 2 pinches

  • Salt – 1/2 teaspoon or as per taste

  • For seasoning:
  • Ghee – 1 to 2 teaspoons

  • Black pepper – 1/2 teaspoon

  • Jeera (cumin seeds) – 1/2 teaspoon

  • Green Chilli – 1

  • Curry leaves – few

  • Cashew nuts – few (Optional)

Directions

  • Here’s an improved version of the recipe instructions:
  • Peel the ginger and finely chop it.
  • Slit the green chili in half.
  • Coarsely crush the pepper and cumin seeds.
  • In a dry pan, add the oats and roast them until they are just warm to the touch. Remove from the pan.
  • In the same pan, lightly fry the dal for a few seconds.
  • Combine the oats and dal in a pressure cooker. Add turmeric powder, chopped ginger, asafoetida powder, salt, and three cups of water.
  • Close the lid and pressure cook for 3 to 4 whistles. Allow it to cool, then open the cooker and mix well.
  • In a small pan, heat the ghee. When hot, add the cashew nuts, chopped ginger, slit green chili, curry leaves, crushed pepper, and cumin. Pour this mixture over the pongal and mix thoroughly once more.
  • Enjoy your pongal!
