Ingredients

  • Vendaikai – 10 or 15

  • Onion – 1 (medium size)

  • Tomato – 1

  • Red Chilli Powder – 1 teaspoon

  • Coriander Powder – 2 teaspoons

  • Turmeric Powder – ¼ teaspoon

  • Oil – 2 tablespoons

  • Mustard – ½ teaspoon

  • Jeera – ½ teaspoon

  • Curry leaves – few

  • Salt – ½ teaspoon or as per taste

Directions

  • Wash and pat the okra dry. Cut it into 2-inch pieces on a slight diagonal.
  • Slice the onion and tomato lengthwise.
  • Heat one or two teaspoons of oil in a tawa and add the okra pieces. Fry over medium heat until light brown spots appear on the okra. Remove and set aside.
  • In the same tawa, add the remaining oil. Once hot, add mustard seeds. As they pop, add cumin and curry leaves. Follow with the chopped onion and sauté until it turns translucent. Add the fried okra, red chili powder, coriander powder, turmeric, and salt. Stir well to combine. Finally, mix in the tomato pieces and cook for a few more seconds before removing from heat.
  • Serve as an accompaniment to rice or chapati.
