Learn how to make a delicious yellow pumpkin curry with this simple recipe. With tender pumpkin, grated coconut, and spices, it’s a flavorful dish to enjoy.


  • 1 big piece yellow pumpkin

  • 1 tablespoon grated coconut

  • 1 teaspoon oil

  • 1/2 teaspoon mustard

  • 1 teaspoon Urad dhal

  • 2 Red chillies

  • A pinch of asafoetida powder

  • Few curry leaves

  • 1/2 teaspoon Salt or as per taste


  • Peel the pumpkin, remove its seeds, and chop it into small pieces.
  • Heat one teaspoon of oil in a kadai over medium heat. Once the oil is hot, add mustard seeds. Wait for the mustard seeds to pop before adding urad dal, asafetida powder, split red chillies, and curry leaves.
  • Stir in the pumpkin pieces and season with salt. Lightly sprinkle some water over the mixture. Cover the kadai with a lid and let the pumpkin cook until it’s soft and the added water has evaporated, leaving the curry mostly dry.
  • Finally, stir in the grated coconut, mixing it well with the cooked pumpkin.
  • Serve the pumpkin stir-fry warm as a delightful side dish.
