This flavored rice made with carrot, red chillies, green chillies, ginger and peanuts is served with potato curry.

Ingredients

  • Raw Rice – 1 cup

  • Grated Carrot – 1 cup

  • Red chillies – 3 or 4

  • Green chillies – 2

  • Fresh ginger – a small piece

  • Bengal gram dhal – 1 tablespoon

  • Urad Dhal – 1 teaspoon

  • Asafoetida – ¼ teaspoon

  • Peanut – 2 tablespoons

  • Oil – 4 or 5 teaspoons

  • Mustard – Half teaspoon

  • Curry leaves – few

  • Salt – 1 teaspoon or as per taste

Directions

  • Cook rice until soft (but not mushy).
  • Spread it on a plate or broad vessel. Sprinkle one or two teaspoon oil over it.
  • Chop the ginger finely.
  • Slit the green chillies lengthwise.
  • Break the red chillies into small pieces.
  • In a frying pan, put the oil and when it is hot, add mustard.
  • When it pops up, add Bengal gram dhal, Urad dhal, asafetida powder and fry until the dhals turn light brown.
  • Add peanuts, red chillies and fry just for a second.
  • Add green chillies and curry leaves and fry for a while.
  • Now add carrot gratings and fry till it changes its colour and becomes soft.
  • Add cooked rice to this and mix gently.
  • Add salt to taste.
