Aval Kesari is a comforting, quick sweet made from roasted rice flakes. It has a soft, melt-in-the-mouth texture and warm cardamom flavor. Golden ghee, fried cashews, and plump raisins add richness and crunch. It comes together in one pan, perfect for breakfast, dessert, or festive offerings.
It is made by dry-roasting poha until warm. Then you cool the poha and grind it to a coarse powder. Cook the poha in boiling water until soft. Sweeten it with sugar. Add kesari (saffron) powder and simmer on a low flame until it thickens. Finished with ghee, fragrant cardamom, and a garnish of fried cashews and raisins, it’s mixed well and set in a greased bowl for a rich, melt-in-the-mouth dessert.
