Thinai Dosai or Foxtail Millet Dosa, is a nutritious and gluten-free variation of traditional dosa. To prepare it, combine Thinai flour, wheat flour, rice flour, and salt in a bowl, then gradually add water to create a thin batter. Heat a tawa (griddle) and lightly grease it with oil. Pour a generous ladle of batter starting from the edges and moving inward, mimicking the technique used for rawa dosa. Drizzle a teaspoon of oil around the edges for added crispiness. Cook on medium heat until golden, then flip to cook the other side. Enjoy this healthy dosa with chutney or sambar!
This dosa made with Thinai (foxtail millet) is served with Onion chutney. Thinai (Foxtail Millet) Flour is readily available in stores. You can add a ladle of “Ordinary Dosa Batter” instead of rice flour in this recipe and make this dosa.
You can also add chopped onion, ginger, green chillies to make it little spicy.
