Ingredients

  • Big Onion – 2

  • Butter – 2 teaspoons

  • Water – 4 cups

  • Milk – ¼ cup

  • Corn flour – 1 teaspoon

  • Coriander leaves – few

  • Salt and pepper powder – As required

Directions

  • Begin by peeling and finely chopping the onions.
  • In a thick-bottomed pot, melt butter and sauté the chopped onions until they are glossy but not browned.
  • Add water, a pinch of salt, and pepper powder, then bring to a boil for five minutes, or pressure cook for one whistle. Once cooled, blend into a smooth puree and strain through a sieve.
  • Return the puree to the pot and bring to a boil once more. As it starts to boil, lower the heat.
  • Combine the flour with milk and stir it into the soup. Continue stirring for a few seconds, then remove from heat.
  • Garnish with chopped coriander leaves, season with salt and pepper to taste, and serve hot. Optionally, you can add a touch of fresh cream when serving.
