Kondai Kadalai Rice is a flavorful dish made with soaked chana (Kondai Kadalai) and rice, cooked in a pressure cooker. The preparation begins by soaking the chana overnight and chopping onions, tomatoes, ginger, and garlic. After a brief soak of the rice, spices such as cinnamon, cloves, and cardamom are sautéed in oil or ghee, followed by the addition of onions, green chillies, ginger, and garlic until the onions are transparent. Tomatoes, spices (red chili powder, coriander powder, turmeric), soaked chana, and rice are then mixed in, along with salt and water. A splash of lemon juice adds a zesty touch before the mixture is pressure cooked for 3 to 4 whistles. Once cooked, the rice is gently mixed and garnished with coriander leaves, and it’s recommended to serve it with onion raita or cucumber curd pachadi for a complete meal.
