Cucumber Curd Pachadi

This traditional pachadi or raitha is made with cucumber and yoghurt. It can be served with any flavored rice or pulav.

Ingredients

  • Cucumber – 1 No

  • Thick Curd – 1 cup

  • Green Chillies – 2

  • Fresh ginger – a small piece

  • Coriander leaves – few

  • Pomegranate pearls (Optional) – few

  • Salt – ½ teaspoon or as per taste

Directions

  • Remove the skin and seeds from cucumber and cut it into small pieces.
  • Chop green chillies and ginger finely and add to the cucumber along with salt. Mix well.
  • Add the curd (Beaten well) and stir well. Garnish with pomegranate pearls and coriander leaves.
  • Note: For one cup cucumber pieces, you have to add one cup curd.
