Tomato Brinjal Chutney

Tomato Brinjal Chutney is a flavorful condiment. It is made by first boiling large pieces of brinjals until they are tender. Then, the brinjals are coarsely ground. The chutney begins with finely chopped onions, green chillies, and tomatoes. They are sautéed in hot oil with mustard seeds that pop. Urad dhal and asafetida are added and cooked until golden. Once the onions become transparent, the mashed tomatoes are added, followed by the brinjal paste, turmeric powder, and salt. Water is mixed in for consistency, and the mixture is allowed to boil before serving. This chutney pairs well with various dishes, adding a delicious tangy and spicy flavor.

This tomato brinjal chutney can be served with idli or dosa.
