Mango Thokku

Mango Thokku is a tangy and spicy South Indian condiment made from grated mango. To prepare it, start by washing and peeling the mango, then grating it finely. Dry fry fenugreek seeds until they are light brown and then pound them into a fine powder. In a thick-bottomed pan, heat oil and add mustard seeds, followed by asafoetida when the mustard pops. Add the grated mango and sauté until it is half cooked. Next, incorporate turmeric powder, red chili powder, and salt, stirring until the mixture blends well and the oil separates. Finally, add jaggery powder and the prepared fenugreek powder, mixing thoroughly before removing from heat. Enjoy this flavorful mango thokku as a side dish with rice or chapati!

  2. Hello kamala,

in several of your recipes you have talked about adding mango, as in the above mango thokku. Are you suggesting ripe mangos or raw ones? It would help me if you could be specific about that. Thank you.
