Bread Upma is a quick, comforting way to turn simple bread into a flavorful, South Indian–style snack. Bread squares are tossed into a sizzling tempering of mustard seeds, chana dal, and urad dal, then coated in a fragrant mix of sautéed onion, green chilies, ginger, mashed tomato, turmeric, chili powder, and salt. Finish by topping with juicy tomato chunks and fresh coriander, cover and steam on low until the bread softens, then brighten everything with a splash of lemon juice before serving.
An upma made with bread slices, tomato and other spices. In this recipe, I have added “Karpooravalli Leaves” also known as “Oma Valli Leaves” or “Mexican Mint” instead of “Coriander Leaves”.
