Ingredients
Brinjal – 4 to 5 Nos
Green Gram Dhal – ¼ cup
Pepper – 1 tablespoon
Oil – 1 teaspoon
Turmeric powder – a pinch
Sambar Powder – 1/2 teaspoon
Mustard – ½ teaspoon
Urad dhal – 2 teaspoon
Curry leaves – few
Salt – 1 teaspoon or as per taste
Directions
- Cook the green gram dhal till soft and cut the brinjals into small pieces.
- Place the brinjal pieces in a vessel and add salt, sambar powder, turmeric powder and just enough water to cover the vegetables.
- Cook the vegetable on medium flame till it is soft.
- Then, add the cooked dhal and mix well.
- Heat oil in a frying pan and add mustard and urad dhal, frying till they become light brown. Coarsely powder pepper and add it to the oil.
- Stir in the curry leaves, then add this seasoning to the vegetable and mix well.
- Remove from heat.
- Tips
- For enhanced flavour, replace oil with one teaspoon of ghee for seasoning.
