Mullangi Sambar | Radish Sambar

Experience the delicious and nutritious Mullangi (Radish) Sambar – a flavorful South Indian dish with tangy tamarind and spicy sambar powder.

Ingredients

  • White Radish – 2

  • Tomato -1

  • Thuvar dhal – Half cup

  • Tamarind – small lemon size

  • Sambar powder – 1 tablespoon

  • Turmeric powder – ¼ teaspoon

  • Salt – 1 teaspoon

  • For seasoning
  • 2 teaspoon oil

  • Half teaspoon mustard

  • A pinch of asafoetida

  • Few curry leaves

  • Sambar onion – 4 or 5 cut length wise

Directions

  • Wash the thuvar dal and add two cups of water, a pinch of turmeric powder, and pressure cook until soft.
  • Soak the tamarind in water and extract the juice.
  • Cut the tomato into medium-sized pieces.
  • Peel the radish and slice it into thin rounds. Add just enough water to cover the radish slices.
  • Include the tomato pieces, salt, sambar powder, and turmeric powder, and cook over medium heat until the radish is tender.
  • Stir in the tamarind juice and bring to a boil.
  • Then, add the mashed cooked thuvar dal.
  • Heat oil in a kadai, add mustard seeds, and when they pop, add asafoetida, chopped onions, and curry leaves. Fry briefly.
  • Incorporate this mixture into the sambar, mix well, and then remove from the heat.

  3. hi kamala, i don't know if you'll see this comment. when i make this sambar, i feel it's a little too thin — missing body or something. it certainly does not look as thick as your picture. can you specify how much tamarind water you add to the softened radish mixture, and, how much liquid do you let boil off once everything is mixed in? thanks.

    Thank you for visiting my site. The body of the sambar mostly depends on the type of sambar powder we use. Check my "Sambar powder" recipe. When you first add water to the radish pieces, just add (say about one or one and half cup of water) water which will cover the vegetable. Once it is cooked well, then add tamarind juice (this should be about half to one cup of thick juice). Finally add cooked dhal (it should be of semi liquid consistency). Then you will get perfect sambar. Still you find your sambar watery, then just mis one or two teaspoon of rice flour with little water and add to the boiling sambar. This will thicken the sambar.
