Potato Capsicum Fry is a quick, homely stir-fry of potatoes, capsicum, onions and tomatoes. Crispy edges on the potatoes and tender bell peppers make every bite satisfying. Potato Capsicum Fry is a quick, flavorful stir-fry of lightly crisped potatoes and just-tender capsicum finished in a spiced tomato-onion base. Peel and slice potatoes lengthwise into 1/2″ pieces; chop capsicum, onion, and tomato lengthwise and finely chop garlic. On a heavy-bottomed tawa, shallow-fry the potatoes in 2–3 tsp oil until light brown, set aside; fry capsicum briefly in a little more oil and keep aside. In the remaining oil, temper cumin and garlic, sauté onion until translucent, then add tomato, sambar powder, turmeric and salt. Return the fried potato and capsicum, add mint and coriander, sprinkle a little water, cover and cook a few minutes until flavors meld. Serve hot as a spicy, aromatic side with rice or rotis.

Ingredients

  • Potato – 2

  • Capsicum- 1

  • Onion- 1

  • Tomato – 1

  • Garlic Pearls (small size) – 5

  • Mint leaves- a handful

  • Coriander leaves- a handful

  • Cumin (Seeragam) – 1/2 teaspoon

  • Sambar Powder – 2 teaspoons

  • Turmeric Powder- 1/4 teaspoon

  • Oil – 2 to 3 tablespoons

  • Salt – 3/4 teaspoon or as per taste

Directions

  • Peel the skin from potato and cut it lengthwise into 1/2” thickness pieces..
  • Chop capsicum, onion and tomato lengthwise.
  • chop garlic finely.
  • Heat a heavy bottom Tawa and put two to three teaspoons of oil.
  • Add potato pieces and fry on medium heat till it becomes light brown. Remove and keep aside.
  • Same Tawa add one more teaspoon of oil and add capsicum pieces and fry for few minutes. Remove and keep aside.
  • Now put the remaining oil in the Tawa and add cumin and chopped garlic. Fry for few seconds and add chopped onion.
  • When the onion turns translucent, add tomato pieces and stir well.
  • Add sambar powder, turmeric powder and salt. Mix it.
  • Add fried potato and capsicum along with mint and coriander leaves. Mix everything well.
  • Sprinkle little water and close with a lid.
  • Cook for few minutes and remove.
