This potato curry is made with Potato, onion and sambar powder. It is served as a side dish for any rice varieties and chapat/roti.

Ingredients

  • Potato – 2 Nos

  • Onion – 1 No

  • Sambar Powder – 2 teaspoons

  • Turmeric Powder – 1/4 teaspoon

  • Salt – 1/2 teaspoon or as per taste

  • For Seasoning:
  • Oil – 2 tablespoons

  • Mustard – 1/2 teaspoon

  • Urad dhal – 1 teaspoon

  • Asafoetida Powder – 2 pinches

  • Curry Leaves – few

Directions

  • Wash the potato and cut it into small pieces. No need to remove the skin.
  • Chop onion finely.
  • In a kadai put the oil and when it is hot add mustard. When it starts to pop up, add urad dhal and asafoetida and fry till the dhal turns light brown.
  • Add chopped onion and curry leaves and fry till the onion become translucent.
  • Add potato pieces along with sambar powder, turmeric and salt. Mix well.
  • Add a cup of water. Close with a lid and cook on medium flame till the potatos absorbed all the water and cooked soft.
  • Open the lid, mix it well and remove.

Notes

  • Water quantity may be increased or decreased depending on the size of the potato. You have to add water just to cover the potatos.
  • After cutting the potatos, put it in water to avoid decolourisation.
