Vendaikai Curry

Vendaikai curry, also known as okra curry, is a delicious and flavorful South Indian dish made with tender okra cooked in a spicy and tangy gravy. Ingredients

  • Vendaikai (okra) – 10 or 15

  • Onion – 1 (medium size)

  • Tomato – 1

  • Sambar Powder – 1 teaspoon

  • Turmeric Powder – a pinch

  • Oil – 2 tablespoons

  • Mustard – ½ teaspoon

  • Urad dhal – 1 teaspoon

  • Jeera – ½ teaspoon

  • Asafoetida powder – two pinches

  • Curry leaves – few

  • Salt – ½ teaspoon or as per taste

Directions

  • First, cut the okra (vendaikai) into one-inch rounds. Finely chop the onion and tomato.
  • Heat a teaspoon of oil on a tawa and add the okra pieces, spreading them in a single layer. Fry them on low heat until their stickiness disappears.
  • In a separate kadai, add some oil and heat it up. Once hot, add mustard seeds and wait for them to pop. Then add urad dal, jeera (cumin), and asafoetida powder, frying until they turn light brown.
  • Add curry leaves and chopped onion to the kadai, frying until the onion becomes transparent.
  • Next, add the tomato pieces and fry until the tomatoes are well mashed.
  • Add the fried okra pieces to the kadai and mix well, turning the heat to medium.
  • Sprinkle sambar powder, turmeric, and salt over the mixture, stirring well. Cover with a lid and cook on low flame for a few minutes.
  • Finally, remove the lid and continue frying for some more time until all the ingredients are well blended. Your dish is now ready to be served.
