Beetroot Cold Soup

Indulge in the refreshing flavors of beetroot and orange with this vibrant chilled soup. Perfect for a light, summery dish with a hint of spice.

Ingredients

  • Beetroot – 2 (Medium size)

  • Orange – 1

  • Onion – 1 (Medium size)

  • Garlic clove – 1

  • Ginger – 1 small piece

  • Red Chilli Powder – a small pinch

  • Jaggery powdered – 2 tablespoon (Or honey)

  • Oil – 2 teaspoons

  • Salt and Pepper – as per taste

Directions

  • Wash and peel the beetroot, then cut it into medium-sized pieces.
  • Finely chop the onion, garlic, and ginger.
  • Squeeze the juice from an orange and finely chop a small portion of the orange peel.
  • Cover the beetroot pieces with enough water and cook until soft.
  • Heat oil in a kadai, add the chopped onion, garlic, ginger, orange peel, red chili powder, and a pinch of salt, and sauté for a few seconds.
  • Add the cooked beetroot along with the water and boil for ten minutes on medium heat. Remove from the stove and let it cool.
  • Blend into a fine puree using a mixer. Transfer to a bowl, add orange juice, jaggery powder or honey, salt, and pepper, and mix well.
  • Garnish with chopped orange peel and serve chilled.

    • Yes. I am native of Thanjavur. I do not have any degree in cooking and also I am not taking any cookery classes. I learnt most of the recipes from my mother/grand mother and through friends and other cookery shows/books.
