Warm up with a comforting bowl of tomato soup made with spices and ginger

Ingredients

  • Fully ripe tomatoes – 5

  • Butter or ghee – 1 teaspoon

  • Jeera – 1 teaspoon

  • Coriander seeds – 2 teaspoons

  • Fresh ginger – a small piece

  • Corn flour – 1 tablespoon

  • Salt and Pepper powder as required

Directions

  • Quarter the tomatoes and place them in a wide pot. Pour in five cups of water.
  • Add coarsely crushed coriander seeds and finely chopped ginger to the tomatoes.
  • Cook until the tomatoes are tender. Once cooled, puree the mixture in a blender and strain it.
  • Dilute some corn flour in a little water to create a thin paste, then stir it into the tomato puree.
  • In a heavy-bottomed pot, melt the butter, add cumin seeds, and sauté lightly.
  • Pour in the tomato puree and simmer over medium heat until it thickens.
  • Season with salt and pepper and serve garnished with croutons.
