In India, there is a type of flour called “Sathu maavu” in Tamil, which is made from a combination of grains, nuts, and dhals. This flour is high in protein and is often used to make “Kanji” (porridge). To make sweet porridge, milk and sugar are added, while for a sour version, buttermilk and salt are added.
As it can be time-consuming to make this flour at home, many people buy it ready-made from the market. Many food processing companies sell this flour as “Health Mix Powder” under their own brand name.
I made this burfi using “Manna Sathu Maavu”. Also try the mango burfi recipe.

Difficulty: MediumIt is mango season, so we can get fresh fruits to make this Burfi. If it is off-season, we can use ready-made mango pulp available in stores. This Burfi is made with mango, Besan flour and cashew nuts.

If you use milk, it will take more time to get the right consistency. You have to stir for a long time till the water content in the milk is absorbed. Moreover, if you cook for more time, the taste may differ. Instead you can use “Khoya”. If you want to use milk, first boil and allow to reduce to 1/3rd of its quantity and then add the remaining ingredients.

Just now I had tried this recipe. It turned good. but in that recipe sugar syrup (as above mentioned measurement) is not enough for the flour & milk powder mixture.so what can I do to improve the texture ? can you explain to me?

The quantity mentioned in my recipe is perfect for the burfi I made with “Manna” Brand flour. I am not sure which brand you used. If you feel the sugar is not enough, you can increase it and to improve the texture you have to add more ghee.

I tried this recipe today madam the taste was very good but i could not get burfi shapes because mixture didn’t turn out to be soft dough. i used manna health mix. The flour mixture went out like puttu. but sugar taste is enough. Where should i correct to get correct burfi shapes. Please help
May be you have overcooked. I also used Manna health mix only. Once the sugar starts boiling, reduce the heat and add the flour mix and stir well. It will become soft dough now. Add ghee and immediately transfer to the greased plate. If you cook it on high flame for long time, the sugar will get crystalised and the mixture will be like puttu only. If you feel the water quantity is less, first put the sugar in a vessel and add enough water to cover the sugar completely.

If i have to add milk instead of milk powder, at what stage should i add and how much quantity of milk should i add. Pls reply. My kids dont like to have kanji so i thought of giving this one. This looks interesting.
If you want to usemilk, you can put the milk in a heavy bottomed kadai and bring to boil. Then reduce the heat and add sathu maavu powder and sugar and stir continuously till it become thick and proceed.

You can store it outside for 2 weeks. In the fridge it stays good for even a month.
