Potato Halwa

Potato Halwa is a delightful dessert. It is made by mashing cooked potatoes. These are mixed with sugar over a slow fire until thickened. Once the mixture reaches the desired consistency, vibrant food color is added. Ghee is also added. This allows the mixture to pull away from the sides of the vessel. To enhance the flavor, cardamom powder and badam essence are mixed in. Finally, the halwa is transferred to a greased bowl to set, creating a sweet treat that’s rich and aromatic.

This halwa is made with potato and sugar without any flour.

Ingredients

  • 2 big potatoes

  • 1 1/2 cup sugar

  • 1/2 cup ghee

  • 1 teaspoon cardamom powder

  • Few drops of badam essence

  • Yellow food colour – few drops (Optional)

Directions

  • Cook the potatoes, remove skin and mash it well.
  • Add the sugar to the cooked potatoes and keep it on a slow fire. Stir continuously until the mixture is thick.
  • Add food colour and the ghee. The potato mixture will now leaves the sides of the vessel.
  • Add the cardamom powder, badam essence and mix well.
  • Transfer to a greased bowl.
